In late 2010 I visited Pure Food and Wine and enjoyed my first truly haute cuisine multiple course raw meal. Amazing. I purchased the restaurant's cookbooks on site and became familiar with the work of Matthew Kenney. Since that time my library has grown to 50 books and I've sampled raw meals in most cities that we've traveled to. I joke that I am raw until dinner, then paleo most nights.
The world of raw food is exploding and I'm particularly interested in following chefs that are focused on the beauty of this cuisine as much as the health benefits.
